Toasted Marshmallow Ice Cream: Savory Sweet and Satisfying

This ice cream seriously tastes just like a toasted marshmallow. I was a little surprised at how much it really tastes like a toasted marshmallow. The process of getting the toasted marshmallows into the ice cream base is a bit messy, but so worth it. 

Toasted Marshmallow Ice Cream

Ingredients:

  • 10 ounce
    bag regular sized marshmallows
  • 2/3 cup
    granulated sugar
  • 1 2/3 cup
    half and half
  • 1 1/2 cups
    heavy whipping cream
  • 2 teaspoons
    vanilla extract

Directions:

  1. Preheat oven to 350º F.
  2. Line a baking sheet with parchment paper or a silpat and place the marshmallows on top.
  3. Place the baking sheet onto a rack in the middle of the oven. Allow to bake for 3-4 minutes.
  4. Turn on the broiler and move the baking sheet to the top rack under to broiler and broil for 2-3 minutes or until browned.
  5. In a blender, add in the granulated sugar and half and half. Blend for a few seconds.
  6. Add the toasted marshmallows to the blender and blend until smooth.
  7. Transfer the mixture to a medium bowl and stir in the heavy cream and vanilla. Stir until well mixed.
  8. Cover the bowl and refrigerate until cold, about 4-6 hours or overnight.
  9. Stir the ice cream base well and pour the mixture into the ice cream machine. Churn according to the manufactures directions.
  10. Remove the container from the freezer and transfer the ice cream into it.
  11. Cover the container and place in the freezer.
