I can’t believe I lived so long without pimento cheese. It wasn’t until a few years ago when I discovered pimento cheese at Costco and realized what I had been missing my whole life. Like I always do, I decided to make my own homemade version and like always, it led me to make different varieties.
Pepper Jack Pimento Cheese
Ingredients:

1 cup
shredded sharp cheddar cheese -
1 cup
shredded pepper jack cheese -
4 ounces
cream cheese, softened -
1/4 cup
mayonnaise -
2 1/2 tablespoons
pimentos -
1/8 teaspoon
black pepper -
2-3 dashes
Worcestershire sauce
Directions:
- Using an electric mixer, beat together the cream cheese, mayonnaise, black pepper and Worcestershire sauce.
- On low speed, mix in both shredded cheeses and pimentos.
- Cover the bowl and refrigerate for at least a few hours. Refrigerate overnight for best flavor.
