
I love baking and that includes breakfast baked goods and dessert. It is really hard for me to relinquish the baking duties, but my youngest really likes to make baked doughnuts. I love that she likes baking doughnuts and does not want any help, but it is hard for me not to be in the kitchen.

These doughnuts turned out excellent and tasted amazing! My daughter did an awesome job! The combination of peanut butter and marshmallow is such a delicious one. Peanut butter doughnuts topped with a marshmallow frosting and peanut butter drizzle, what a delicious way to start the day.
Fluffernutter Baked Doughnuts
Ingredients:
Peanut Butter Doughnuts

1/3 cup
peanut butter -
2 tablespoons
nonfat Greek yogurt -
1/2 cup
packed brown sugar -
1
egg -
1/3 cup
milk -
1 teaspoon
vanilla extract -
1 cup
all purpose flour -
1 teaspoon
baking powder
Marshmallow Frosting
-
1 tablespoon
unsalted butter, room temperature -
1/4 cup
marshmallow fluff -
1/2 cup
powdered sugar -
1 teaspoon
milk - extra peanut butter, for drizzle
Directions:
- Preheat the oven to 350º F. Spray a 6 cavity doughnut pan with cooking spray.
- In a large bowl, using an electric mixer, beat together the peanut butter, yogurt and brown sugar until well mixed.
- Beat in the egg, milk and vanilla.
- In a medium bowl, whisk together the flour and baking powder. Slowly mix the dry ingredients into the wet, mixing just until combined.
- Spoon or pipe the batter into the prepared doughnut pan. Bake for 8 minutes or until an inserted toothpick comes out clean.
- Transfer the doughnuts to a cooling rack and allow to cool completely before frosting.
- In a small bowl, using an electric mixer, beat the butter, marshmallow fluff, powdered sugar and milk together until well combined.
- Gently spread the frosting onto the tops of the cooled doughnuts.
- In a small microwave safe bowl, melt some peanut butter in 5 second increments until melted. Immediately drizzle the peanut butter over top of the frosted doughnuts.
